Add mint leaves, water, and confectioners' sugar to a blender. Pulse until the leaves are completely broken down.
Add half the ice and the bourbon. Blend for 3-4 seconds just to combine. (Don't over-blend or you'll dilute it too much)
Fill a julep cup or rocks glass with the remaining crushed ice. Pour the mixture over the ice.
Stir gently and garnish with the mint sprig. Serve immediately.
