    Coconut Cream
  • 3 ounces
    Tomato Paste
  • ¼ cup
    Hot Water
  • 1 tablespoon
    Garam Masala
  • 2 tablespoons
    Curry Powder
  • 1 teaspoon
    Cumin
  • ¼ teaspoon
    Cayenne
  • ½ teaspoon
    Sea Salt

Preparation

  1. 10 mins

    Saute onions in oil for 2 minutes. Add sweet potato and saute for 3 more minutes. Add cauliflower and saute for 2 more minutes. Add spices and saute for 1 more minute.

    Combine tomatoes, tomato paste & hot water and mix thoroughly. Add tomato paste mix and coconut cream to the pan and stir.

  3. 10 mins

    Cover pan and let simmer for 10 minutes then remove from heat.

    Add spinach on top then cover for 1 more minute. Serve over rice.
