This takes just minutes to mix up, with an overnight wait to make the flavors meld. You can easily vary amounts and exact composition based on what you find near you, as well as change and add ingredients to adjust the heat. This particular version is designed to be a 'crowd pleaser', not too spicy or mild for anyone.

Ingredients

  • 425 grams
    Canned Black Beans, Seasoned prefered (Cumin, chili, chipotle, etc)
  • 315 grams
    Canned Corn, "Mexican Style" prefered (red and green bell peppers diced)
  • 800 grams
    Canned Diced Tomatoes, With Green Chilies prefered
  • ½
    Red Onion, Small dice
  • 30 milliliters
    Tomato Paste
  • 1
    Red Pepper, Small dice, If you can't find the "mexican style" corn optional
  • 1
    Poblano Green Chiles, If you can't find the diced tomatoes with it in there optional
  • 55 grams
    Cumin, More or less to taste
  • 15 grams
    Chili Powder, Dark Red prefered, more or less to taste
  • 10 grams
    Kosher Salt, Most of this is canned, you do not need much
  • 20 grams
    Black Pepper
  • 10 grams
    Oregano, Dry
  • 1
    Lime, Juice, and a little zest
  • Jalapenos, To taste optional
  • Cilantro, If you're lucky and it doesn't taste like soap. optional
  • Tortilla chips, For service

Preparation

  1. 30 secs

    Drain and rinse black beans, and place in large mixing bowl.

  2. 30 secs

    Drain corn, and add to mixing bowl.

  3. 30 secs

    Partially drain tomatoes. Just open them, dump into sieve, wait for it to not 'flow' but still remain 'wet', and add to bowl.

  4. 5 mins

    Dice and add raw vegetables (onion, and optional peppers).

  5. 30 secs

    Add dry spices, and tomato paste.

  6. 1 min

    Add lime juice, and a little bit of lime zest.

  7. 2 mins

    Mix well.

  8. 1 min

    Taste, and reseason as needed! Remember, it will grow stronger over time.

  9. 2 mins

    Transfer to container and lid.

  10. 8 hrs

    Refrigerate overnight to allow flavors to mingle. While not entirely required, this stuff just tastes better the next day.

  11. Best served chilled, though not required. Serve with tortilla chips.
