Grilled Beef with Fresh Salsa over Rice

Ingredients

  • For the Fresh Salsa
  • 1 cup
    diced tomatoes
  • garlic, minced
  • 2 tablespoons
    fresh lime juice
  • ½ teaspoon
    ground cumin
  • ½ cup
    kidney beans, drained and rinsed

    green onions, chopped
  • 1
    jalapeño pepper, seeded and minced

    fresh cilantro, chopped
  • For the Beef and Rice
  • 1 pound
    beef steak
  • 2 cups
    cooked rice, warm
  • salt and pepper, to taste
  • 1
    lime, cut into wedges

Preparation

  1. Combine the diced tomatoes, minced garlic, lime juice, cumin, beans, green onions, jalapeño, and cilantro in a bowl. Set aside to let the flavors meld.

  2. Season the beef steak with salt and pepper on both sides.

    Heat your grill or grill pan to high heat. Cook the steak for 3 to 5 minutes per side, depending on thickness and desired doneness. (Use a sharp knife to test doneness - the blade should slide through easily when the meat is properly cooked)

    Let the steak rest for 3 minutes, then slice thinly against the grain using a well-sharpened knife.

  5. Serve the sliced beef over warm rice, topped with the fresh salsa. Garnish with lime wedges and additional cilantro if desired.
