Preheat your oven to 375°F and grab a 9-inch pie dish or similar baking dish.
Sift flour and salt into a bowl. Rub the cold butter cubes into the flour using your fingertips until it resembles coarse breadcrumbs - this technique creates pockets of steam for fluffy dumplings. (Keep the butter cold for the best texture)
Beat the egg and milk together, then add to the flour mixture. Mix gently until you get a soft, slightly sticky dough - don't overwork it or you'll get tough dumplings.
For the syrup, combine water, sugar, and golden syrup in a saucepan. Stir over medium heat until sugar dissolves completely, then bring to a rolling boil.
Drop heaping tablespoons of dough into your baking dish - they don't need to be perfect, rustic is the goal here.
Pour the hot syrup carefully over and around the dumplings. The dumplings will float slightly and that's exactly what you want.
Bake for 25 minutes until the dumplings are golden brown on top and the syrup is bubbling around the edges.
Serve immediately with vanilla ice cream, custard, or heavy cream while the syrup is still hot and glossy.
