Preparation

  1. 10 mins

Peel and roughly chop your ginger. It should be about 1 cup if you don't want to weigh it out.

  2. 2 mins

Combine the ginger, water, and agave nectar in a blender, and puree until smooth.

  3. 1 min

    optional

If you want your syrup to be a bit more spicy, lightly toast the peppercorns in a medium saucepan until they become aromatic.

  4. 5 mins

Add the puree to the saucepan and bring to a light boil.

  5. 30 mins

Once it begins boiling, remove from heat and cover for 30 minutes.

  6. Strain it through a fine mesh (like a cheesecloth or nut milk bag). Pour into a clean bottle with a little bit of vodka to act as a preservative.
