Mix the shredded cheese, sour cream, mayonnaise, and minced garlic in a microwave-safe bowl until well combined.
Microwave uncovered on high for 7 minutes, stirring every 2 minutes to prevent hot spots and ensure even melting. Alternatively, bake at 350°F for 20 minutes. (The microwave method is faster but requires more attention - cheese can go from melted to rubbery quickly.)
Stir in half of the chopped pimiento, green onions, and sunflower seeds.
Continue microwaving for 2-3 more minutes on high, or bake for an additional 5 minutes until bubbly.
Garnish with the remaining pimiento, green onions, and sunflower seeds.
Serve immediately with tortilla chips or kerupuk if you want to be interesting.
This keeps in the fridge for up to a week and reheats well. Just stir thoroughly after reheating - the oils tend to separate. Not exactly Indonesian, but sometimes you need something for the office potluck that won't scare your coworkers.
