I made this for pretzel dogs and it was fantastic!
Melt butter in small saucepan over medium heat.
Whisk in flour and cook for a minute or two until golden.
Slowly pour beer in while whisking constantly so the mixture slightly thickens. Cook for 5 minutes while stirring.
Reduce the heat to low and stir in the cheese and mustard until melted. Season with salt and pepper as desired.
