It's hard to be calorie friendly with pastas and even harder with Alfredo, but this recipe has about half the calories as your traditional Chicken Alfredo Pasta, and we didn't suffer any blows to the taste!
Chicken
--------
- Simmer 1 Tablespoon of Garlic in 1 Tablespoon of butter and simmer on medium heat for 1-2 minutes
- Add sliced chicken and olive oil
- Increase to medium-high heat and cook chicken thoroughly
- Season with salt and pepper, and remove chicken from pan
Sauce
----------
- Using the same pan, add 1 tablespoon olive oil and saute remaining garlic for 2 minutes on medium high heat
- Gradually whisk in flour to mixture for about 1 minute
- Lower to low-medium heat and gradually add in Almond Milk, whisking constantly, your mixture should begin to thicken
- When all of milk is added, and you've reached your desired consistency, add parmasean
- Whisk sauce until there are no lumps
- Season with dried thyme, oregano, and cook for 1 more minute
- Add chicken to sauce, and set on lowest heat setting to keep warm
Noodles
----------
- Start boiling one pot of water
- Skin and Spiralize Sweet Potato
- Boil noodles for 4-5 minutes or until desired consistency
Combine
----------
- Drain noodles, and combine with Alfredo sauce and chicken
- Serve with parmasean and salt/pepper to taste
