De-seed and julienne the bell peppers, and slice the onion into long strips.
Heat olive oil in a medium skillet on medium high heat. Add peppers and onions and saute until browned. Let some spots char for a little bonus flavor.
Add the sliced sirloin to the skillet with the peppers and onions. Add the paprika, Italian seasoning, and salt and pepper. Saute until the beef is cooked.
Transfer the mixture to a separate container. Wipe down the skillet to remove any stray bits, and place a tortilla into the skillet over medium heat. Add a slice of provolone, the beef mixture, and some hot sauce, then top with 2 more provolone slices and another tortilla. Cook until bottom tortilla is starting to brown, and the cheese is melting; flip and cook on other side.
Remove from pan and cut quesadilla into quarters. Serve with some salsa or queso and enjoy!
