Proper Turkish Chili with Beef

Ingredients

  • 1 pound
    ground beef, good quality, 80/20 fat
  • 1
    onion, diced
  • garlic, minced
  • kidney beans, drained
  • diced tomatoes
  • 2 tablespoons
    Turkish red pepper paste (biber salcasi)
  • 1 teaspoon
    cumin
  • 1 teaspoon
    Urfa biber
  • ½ teaspoon
    pul biber

Preparation

  1. Brown the beef in a heavy pan over high heat. Don't crowd it. Let it get proper color.

  2. Add onion and garlic. Cook until onion softens.

  3. 1 min

    Stir in biber salcasi, cumin, Urfa biber, and pul biber. Cook 1 minute until fragrant. (Turkish pepper paste is essential here. American chili powder is weak.)

  4. Add tomatoes and beans. Bring to boil.

  5. 20 mins

    Reduce heat and simmer covered 20 minutes.
