In a large pot, brown 1 lb of ground sausage over medium heat
Dice 1 large yellow onion
Mince garlic and herbs (minus basil)
Add onion and cook until translucent
Add herbs to bloom in pan
Add tomato paste and stir to combine, scraping off brown bits on pot
Add in diced tomatoes and tomato sauce as well as chicken stock
Add whole basil leaves
Bring to a simmer and add parmesan rind
remove parmesan rind
Add tortellini to cook (or until floating)
Add heavy cream and bring to temperature for serving
