Ingredients

    Diced Tomatoes
  • 6 ounces
    Tomato Paste
  • 15 ounces
    Tomato Sauce
  • 1
    Yellow Onion, diced
  • 4
    Garlic Cloves, minced
  • 3
    Rosemary Sprigs, can use dried
  • 3
    Thyme Sprigs, can use dried
  • 2
    Sage Sprigs, can use dried
  • 6 ounces
    Fresh Basil, whole leaves
  • 1 pound
    Ground Italian Sausage
  • 12 ounces
    Heavy Cream
  • 20 ounces
    Cheese Tortellini
  • 6 cups
    Chicken Stock, can use bouillon dissolved in warm water
  • Salt & Pepper, to taste
  • Parmesan rind optional

Equipment

  • large enameled dutch oven, not necessary

Preparation

  1. 6 mins

    In a large pot, brown 1 lb of ground sausage over medium heat

  2. Dice 1 large yellow onion

  3. Mince garlic and herbs (minus basil)

  4. 6 mins

    Add onion and cook until translucent

  5. 1 min, 30 secs

    Add herbs to bloom in pan

  6. Add tomato paste and stir to combine, scraping off brown bits on pot

  7. Add in diced tomatoes and tomato sauce as well as chicken stock

  8. Add whole basil leaves

  9. 20 mins

    Bring to a simmer and add parmesan rind

  10. remove parmesan rind

  11. 5 mins

    Add tortellini to cook (or until floating)

  12. Add heavy cream and bring to temperature for serving
