Tuna and Red Bean Salad with Holy Trinity

Ingredients

  • tuna in oil, drained
  • 1 cup
    corn kernels, fresh or frozen
  • ½ cup
    bell pepper, diced small
  • ¼ cup
    red onion, diced fine
  • red kidney beans, drained and rinsed
  • 4 cups
    mixed greens
  • 3 tablespoons
    good olive oil
  • 2 tablespoons
    fresh lemon juice
  • ¼ teaspoon
    cayenne pepper
  • salt, to taste
  • black pepper, freshly cracked

  1. In a big bowl, gently break up that tuna with a fork - don't mash it to death, baby, we want some chunks left.

  2. Fold in the corn, diced bell pepper, and red onion - that's part of our holy trinity right there, cher.

  3. Add those kidney beans and season everything good with salt and pepper. Taste it - this is your lunch, make it sing.

  4. Divide your greens between two plates and give them a light sprinkle of salt.

  5. Pile that tuna mixture right on top of those greens - don't be shy about it.
