Precalienta el horno to 250°F. In a large oven-safe dish or clay bean pot, combine all ingredients and mix well with a wooden spoon. (Use a cazuela de barro if you have one - the clay gives the beans a deeper, earthier flavor that reminds me of home.)
Cover tightly with foil or a lid and slide into the oven. Let them cook low and slow for 2 hours, stirring once halfway through.
Remove the cover for the last 15 minutes if you want the top to get a little caramelized and concentrated. ¡Órale! Now you have beans with soul.
