Preheat your waffle maker according to manufacturer's instructions. Set oven to 200°F to keep finished waffles warm.
Add all ingredients to blender container in this order: milk, oil, egg, then dry ingredients on top. (Liquids first prevents the flour from sticking to the bottom of the blender)
Blend on medium-high speed just until the dry ingredients are incorporated and batter is smooth. Stop as soon as it comes together.
Pour about 0.5 cup batter onto the center of the waffle grid. Close gently and cook until steam stops escaping and waffle is golden brown.
Use a fork to carefully lift the waffle out. Place on a baking sheet in the warm oven while you make the remaining waffles.
King Arthur Gluten-Free Flour or Bob's Red Mill 1-to-1 work best here. The cornmeal gives these waffles a sturdy texture that holds up to syrup without getting soggy.
