Add cubed sweet potatoes and 1 teaspoon of the salt to pot of water and bring to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender, about 10 minutes.
Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
Add green onions, garlic, parsley, greek yogurt, olive oil, and the remaining 1 teaspoon salt.
Season to taste with additional salt and freshly ground black pepper. Serve hot.
