Ingredients

  • 4 cups
    Raw Julienned Vegetables, Snow Peas, Carrots, Red Cabbage, Cucumbers, Green Onions, etc.
  • 12 ounces
    Noodles, May Use Spaghetti or Soba
  • 7
    Garlic Cloves, Diced
  • 2 tablespoons
    Sesame Oil
  • ½ cup
    Tahini
  • 2 tablespoons
    Honey, or Coconut Nectar (V)
  • 3 tablespoons
    Soy Sauce, or Tamari (GF)
  • 1 teaspoon
    Ginger, Minced optional
  • 1 tablespoon
    Rice Vinegar
  • ½ teaspoon
    Black Pepper, Or To Taste
  • 1 teaspoon
    Sesame Seeds, For Garnish

Preparation

    Cook the noodles according to package instructions until tender but not mushy. When they’re done, rinse in cold water, then toss with a little sesame oil.

    Heat a large pan over low-medium heat. Pour in the sesame oil and once warmed, stir in green onions and garlic. Cook until the garlic is a light golden brown and fragrant, stirring every so often so it doesn't burn. Whisk together the sesame oil and tahini, honey, soy sauce, ginger, and vinegar in a large bowl. Thin the sauce with hot water until it’s about the consistency of heavy cream; you will need 1/4 to 1/2 cup per serving.

  3. Combine all ingredients. Serve chilled.
