Ingredients

    Udon Noodles, Frozen, May Sub with 165 grams Soba Noodles (Dry)
  • 3 cups
  • 1 tablespoon
    Mirin
  • 1 teaspoon
    Sugar
  • 1 tablespoon
    Soy Sauce, or Tamari (GF)
  • ½ teaspoon
    Salt
  • 6

  • 2
    Green Onions, Diced
  • 2 tablespoons
    Daikon, Japanese, Grated
  • 1 tablespoon
    Cilantro, Chopped optional
  • 1 teaspoon
    Ginger, Grated optional
  • Shichimi Togarashi, To Taste

Preparation

  1. 5 mins

    Add kombu dashi, mirin, sugar, soy sauce, and salt to a pot and bring to boil. Once boiling, turn off the heat and set aside.

  2. 10 mins

    Bring a large pot of water to boil then add frozen udon noodles. Cook for 1 minute then strain well. If using dry soba, cook for 5 minutes then strain and rinse well.

  3. 2 mins

    Serve udon noodles and soup in serving bowls and top with inariage, green onion, daikon, cilantro, ginger and sprinkles of shichimi togarashi.
