Add kombu dashi, mirin, sugar, soy sauce, and salt to a pot and bring to boil. Once boiling, turn off the heat and set aside.
Bring a large pot of water to boil then add frozen udon noodles. Cook for 1 minute then strain well. If using dry soba, cook for 5 minutes then strain and rinse well.
Serve udon noodles and soup in serving bowls and top with inariage, green onion, daikon, cilantro, ginger and sprinkles of shichimi togarashi.
