Instant Pot Chicken Lime Soup

Super easy, "set and forget" soup! I like it less soupy, and I've found that it's really good over pasta, but feel free to freestyle with this recipe. Add more water to make it more soupy, or less and put it in tacos, or whatever you want! It's super forgiving and tasty no matter what you do to it.

Ingredients

    chicken thighs
  • 12 ounces
    black beans
  • 15 ounces
    corn, canned is fine
  • 2
    onions
  • 4 tablespoons
    lime juice
  • 2 teaspoons
    cumin
  • 2 teaspoons
    oregano
  • 1 tablespoon
    red pepper flakes
  • 2 tablespoons
    garlic, chopped
  • 2 cups
    chicken broth
  • 2 cups
    water
  • ¼ cup
    cilantro, finely chopped
  • salt, pepper, to taste

Preparation

  1. 25 mins

    Add all ingredients to the Instant Pot, and set to High for 25 minutes.

  2. 10 mins

    The Instant Pot will take around 10 minutes to get up to pressure.

  3. 20 mins

    Let the pressure naturally release completely.

  4. 10 mins

    Remove the chicken thighs and shred the chicken, putting it back into the pot.

  5. Season with salt, pepper, and maybe some hot sauce if you like it more heat.
