Preheat oven to 350°F. Grease a 9x13-inch baking dish.
Layer half the sliced onions in the bottom of the prepared baking dish. Top with half the uncooked macaroni, half the diced ham, and half the shredded cheese. (Using uncooked pasta creates a more cohesive casserole as it absorbs the liquid during baking)
Repeat layering with remaining onions, macaroni, ham, and cheese.
In a medium bowl, whisk together milk, sour cream, and cream of mushroom soup until smooth. Pour evenly over the layered ingredients.
Cover tightly with foil and bake for 35 minutes. Remove foil and bake an additional 10 minutes until pasta is tender and top is lightly golden.
Let rest for 5 minutes, then sprinkle with chopped parsley before serving.
