Beer Battered Cod

Ingredients

    cod fillets
  • spray cooking oil, I used olive oil spray
  • Batter
  • 1 cup
    flour
  • 2 tablespoons
    cornstarch
  • ½ teaspoon
    baking soda
  • 1
    egg
  • 6 ounces
    beer, lager is best
  • Dredge
  • 1 cup
    flour
  • 2 tablespoons
    paprika
  • 3 tablespoons
    cajun seasoning
  • salt + pepper, to taste

Preparation

  1. 5 mins

    For the batter: combine flour, cornstarch, and baking powder in a medium bowl. Beat in 1 egg, and pour in beer and mix until smooth.

  2. 20 mins

    Cover mixture in plastic wrap and refrigerate for at least 20 minutes.

  3. 5 mins

    For the dredge: add flour to a shallow dredging pan, and cover with paprika, cajun seasoning, salt, and pepper. Stir together to combine and add a bit more of everything to the top of the mixture.

  4. 5 mins

    Slice fillets into 1-inch wide strips (against the grain). Pat strips dry with a paper towel.

  5. 10 mins

    Dredge filet strips, then cover completely in batter. Allow all excess batter to drop off, and then dredge again.

  6. 3 mins

    Preheat air fryer to 390° for at least 3 minutes.

  7. Spray breaded strips with cooking oil liberally, until all flour is coated. Place strips in air fryer baskets, making sure they don't touch each other.

  8. 5 mins

    Fry for 5 minutes.

  9. 1 min

    optional

    If there are any dry spots, spray with more cooking oil and fry for an additional 1 minute.

  10. Serve with lemon and malt vinegar, or on some delicious tacos.

Notes

This recipe uses an air fryer -- if you don't have one, you can probably use a convection oven to achieve a similar result. Adjust cooking times as needed.
