    salted macadamia nuts, chopped
  • 1 cup
    unsweetened coconut milk

  1. Heat your oven to 350°F. Get a 13x9 inch baking dish - glass or ceramic works best.

  2. Arrange the mahi mahi pieces in a single layer in the dish. Don't crowd them - the fish needs room to cook properly.

  3. Season generously with salt and pepper. Fresh-cracked pepper makes a difference here.

  4. Sprinkle half the chopped macadamias over the fish, then pour the coconut milk evenly over everything. (The coconut milk should just barely cover the fish - add a splash more if needed)
