Heat your oven to 350°F. Get a 13x9 inch baking dish - glass or ceramic works best.
Arrange the mahi mahi pieces in a single layer in the dish. Don't crowd them - the fish needs room to cook properly.
Season generously with salt and pepper. Fresh-cracked pepper makes a difference here.
Sprinkle half the chopped macadamias over the fish, then pour the coconut milk evenly over everything. (The coconut milk should just barely cover the fish - add a splash more if needed)
Bake for 18 minutes, until the fish is opaque and flakes easily with a fork. Don't overcook - mahi mahi turns tough.
Sprinkle the remaining macadamias on top just before serving for extra crunch.
