This is a quick and easy weeknight meal that my family has enjoyed for years. We usually eat is with fresh corn on the cob, but it would be tasty with rice, pasta, potatoes, or salad.

Ingredients

    Ground chuck
  • 1
    medium onion, diced
  • 2
    cloves garlic, minced
  • 1 tablespoon
    curry powder
  • 1
    medium zucchini, diced
  • ½ cup
    water
  • 1.2 teaspoons
    salt
  • 1
    medium tomato, diced
  • ¼ teaspoon
    pepper
  • ½ teaspoon
    sugar
  • 1
    9 oz package pita bread
  • ⅓ cup
    crumbled goat cheese optional

    Preheat oven to 350 degrees. In 10 inch skillet, cook ground beef, onion, garlic, and curry powder over medium-high heat until meat is tender and brown (about 10 minutes), stirring frequently. Add zucchini, water, salt, pepper, and sugar; heat to boiling. Reduce heat to low; cover and simmer for 15 minutes. Meanwhile, cut each pita in half, arrange in a single layer on a baking sheet, and warm in a 350 degree oven. Stir tomatoes into beef mixture; heat through. Gently open pitas and spoon mixture into pocket, adding a spoonful of goat cheese to the mixture if desired.
