1. Heat oil in a pan, add mustard seeds and let it sputter.
2. Add channa dal, urad dal, ginger and green chillies and fry them
3. Add sliced onions and fry them for a few minutes
4. Add turmeric powder and combine
5. Add boiled and crumbled potatoes, add water and adjust salt
6. Close the lid and allow it to boil for a few minutes
7. Add one tea spoon of besan flour (or any other flour to thicken the masala)
8. Mix well, make sure the masala is thick enough
9. Garnish with coriander leaves and serve
