    Pasta, spaghetti, linguine or fettuccine
  • 200 grams
    Bacon, chopped
  • Garlic, 2-3 cloves optional
  • 3

  • 40 grams
    Parmesan, finely grated
  • Salt, to taste optional
  • Pepper, to taste optional

Preparation

    Heat oil in a large frying pan over medium heat. Cook bacon until almost crisp, then add garlic and fry until crisp.

    While bacon is frying, cook pasta al dente.

    Whisk eggs and parmesan together in a bowl. Season with salt and pepper.

  4. When the pasta is al dente, use tongs to move it to a large bowl with the bacon and garlic. Let it be dripping wet. Reserve some of the pasta water.

  5. Add the beaten eggs with cheese and toss quickly to combine and let the heat of the pasta and bacon thicken the sauce. Season with salt and pepper. You can add some pasta water back to the pasta to keep it from drying out.
