Preheat your oven to 425°F. Trust me, this high heat is key for getting that crispy-golden crust situation we're after.
Brush the pizza crust with 1 tablespoon of olive oil, then spread the sauce evenly over the surface. Bake for 10 minutes to get a head start on that crust. (This par-baking step prevents soggy pizza bottom — learned this the hard way!)
While that's baking, pat your seafood completely dry with paper towels. I cannot stress this enough — wet seafood = soggy pizza (and nobody wants that).
Remove the pizza from the oven and arrange the seafood on top, then sprinkle with the minced garlic and chopped parsley.
Drizzle with the remaining tablespoon of olive oil and return to the oven for 5-10 minutes, until the seafood is heated through and the crust edges are golden brown.
Remove from oven, immediately sprinkle with Parmesan, and serve. The residual heat will melt the cheese just enough.
