Brown butter blueberry pound cake

Ingredients

  • ½ cup
    plain yogurt, full fat
  • 3
    eggs
  • 1 tablespoon
    vanilla extract
  • 1 cup
    sugar
  • 2 teaspoons
    baking powder
  • 1½ cups
    all-purpose flour plus 1 tbsp
  • ¾ cup
    brown butter
  • 2 cups
    blueberries

Preparation

  1. Preheat your oven to 350°F

  2. Brown butter: add 3/4 cup melted butter to a sauce pan, heat at medium heat stirring gently until browned (about 7-10 minutes, should be simmering)

  3. Blend all of your ingredients except blueberries

  4. Coat your blueberries in flour and carefully fold them into the mix (this will prevent them from sinking!)

  5. Add a sheet of parchment paper (or coat with butter) to your 8 inch cake pan and pour in the mix!

  6. 1 hr, 10 mins

    Bake for about 70 minutes or until a toothpick comes out clean

  7. Let cool, serve and enjoy!
