Put a tablespoon of honey in each glass. Set aside.
Heat milk in a heavy saucepan over medium heat until bubbles form around the edges. Don't let it boil. (Watch it close. Milk scorches fast and tastes burnt all day.)
Take off heat. Add cinnamon and cloves. Cover and let sit 20 minutes.
Bring milk back to a rolling boil. Remove from heat.
Fish out the cloves and throw them away.
Pour half the hot milk into a blender. Cover with the lid and a kitchen towel.
Blend on high for 30 seconds until frothy.
Pour into three glasses, getting some foam in each.
Repeat with remaining milk for the other three glasses.
Stir each glass to mix the honey. Dust with nutmeg and serve.
