  • 1½ pounds
    Yukon Gold potatoes, peeled and cubed

    garam masala

    lemon juice, fresh

Preparation

    Preheat your air fryer to 380°F. In a large oven-safe dish that fits in your air fryer basket, heat the ghee for 2 minutes.

  2. Add mustard seeds to the hot ghee and cook for another minute until they start popping - trust me, you'll hear them!

  3. Stir in the diced onion, cilantro, turmeric, chili powder, paprika, and salt. Mix everything together really well.

  4. Add the cubed potatoes and toss to coat with all the spices. Sprinkle about 0.5 cup water over everything. (The potatoes should be in a single layer as much as possible for even cooking)

    Cover the dish tightly with foil and air fry at 380°F for 20 minutes.

  6. 5 mins

    Remove foil, add the garam masala and lemon juice, and toss gently. Cook uncovered for another 5-8 minutes until potatoes are golden and tender.

  7. Give it a final stir and taste for seasoning - add more salt if needed. I promise this works better than stovetop!
