Whisk together the soy sauce, minced garlic, grated ginger, and sugar in a small bowl until the sugar dissolves. The ginger will perfume the sauce immediately — breathe it in!
Heat your wok or large skillet over high heat until it's smoking hot. Add the neutral oil and swirl to coat, then drizzle in the sesame oil — you'll hear it sizzle and smell that gorgeous nutty aroma.
Toss in the sliced onion and stir-fry for about 30 seconds until it starts to soften and turn translucent at the edges.
Add the snow peas and immediately pour in your prepared sauce. The wok should sizzle dramatically! Toss everything together with quick, confident movements for 2-3 minutes until the snow peas turn brilliant emerald green and are crisp-tender — they should still have that satisfying snap when you bite them. (Don't overcook! Snow peas go from perfect to mushy in seconds.)
Remove from heat and scatter the toasted sesame seeds over the top. Serve immediately while they're still crackling hot.
