Fire up your oven to 375°F and spray a 13x9-inch baking dish with some cooking spray.
In a bowl, mix that cream cheese, squeezed-dry spinach, 1 cup of the mozzarella, and 3 tablespoons of the parmesan until it's nice and smooth. (Make sure you squeeze all the water out of that spinach, bredren - nobody wants watery filling)
Season your pounded chicken breasts with the jerk seasoning, then spread the cheese mixture evenly over each breast.
Starting from the short end, roll up each chicken breast tight-tight and secure with toothpicks if you need to.
Set up your breading station - beat the egg in one shallow dish, mix the remaining 3 tablespoons parmesan with the breadcrumbs in another.
Dip each chicken bundle in the egg, then roll it good in the breadcrumb mixture until it's coated all over.
Place the bundles seam-side down in your prepared baking dish and slide into the oven for 30 minutes or until the chicken hits 165°F inside.
Pull them out, remove any toothpicks, then top with the heated spaghetti sauce and remaining 1/4 cup mozzarella.
