Great picnic food. Satisfying and pleasing to almost everybody. Economical when zucchinis are in season. Easy to double up and make a large batch in one go.

Ingredients

    zucchini, grated
  • 150 grams
    bacon, finely diced
  • 150 grams
    cheese, grated
  • 1
    large onion, finely diced
  • 110 grams
    plain flour
  • 10 grams
    baking powder
  • ¼ cup
    oil
  • 5
    eggs
  • ½ teaspoon
    salt
  • ½ teaspoon
    pepper

  • large bowl, if making a double batch diameter of 30-40 cm is advisable
  • 35cm x 25cm baking tray, for double batch
  • 15x25 cm baking dish, for single batch
