In France, "tarte Normande" is a type of tart where the fruits are submerged in a vanilla custard filling. It is very good with tangy fruits such as apple and rhubarb :) (don't get fooled by the crappy picture !).

Preheat the oven to 180°C
Wash the apples and rhubarb, and dice them.
Place the puff pastry in a 25-30 cm pie dish and prick it with a fork. Put some weight on top (such as clay balls, or beans) and par-bake the dough for 10 minutes at 180°C.
Remove the weight and cook for an additional 5 minutes.
While the dough is baking : pour 30 g of sugar in a pan and caramelize it on high heat : simply spread the sugar as evenly as possible on the pan and wait until it melts into an ambered color caramel.
Add the butter and give a quick stir before adding in the diced apples and rhubarb. Cook until softened.
Pour the fruit mixture on the puff-pastry that was par-baked for 15 minutes.
Prepare the custard filling. In a bowl, crack two eggs. Add the remaining sugar (50 grams), the liquid cream and the vanilla extract. Mix until combined. Pour the custard filling on the fruit mixture.
Bake the tart for 35 minutes at 180°C.
