Preparation

  1. Melt 2 chocolate coins in a microwave-safe bowl in 30-second intervals, stirring between, until smooth.

  2. Dip the flat side of each round chocolate candy into the melted chocolate and press onto a chocolate coin to create top hats. Set aside to firm up.

  3. 3 mins

Beat the softened butter until light and fluffy, about 3 minutes. Gradually add the sifted powdered sugar, beating on low speed initially to prevent a sugar cloud.

  4. 2 mins

Add hot water and beat on high speed for 2 minutes until the buttercream is light and creamy. Reserve about 2 tablespoons for attaching the hats later.

  5. Spread a generous layer of buttercream on each cupcake, creating a slightly domed surface.

  6. Press a marshmallow into the center of each cupcake for the snowman's head.

  7. Break each chocolate stick cookie in half and insert the pieces into the sides of the cupcakes for arms.

  8. Using a piping bag or squeeze bottle, pipe green icing around the marshmallow to create a scarf.

  9. Pipe small black dots for eyes, an orange or red triangle for the nose, and three black dots down the front for buttons.

  10. Dab a small amount of reserved buttercream on top of each marshmallow and gently press the chocolate coin hats into place.
