mix all breading ingredients together
mix the beaten egg with the buttermilk
soak chicken in buttermilk and egg mix
remove chicken from buttermilk, allow excess to drip off.
Dip chicken pieces in breading to coat all sides, shake off excess
allow to sit on a rack, over a baking sheet
heat the oil to 350 degrees - use a deep-frying thermometer to check the temp
fry 3-4 pieces at a time - being careful not to crowd the pot. Fry until medium golden brown, turning once, 15-18 minutes.
allow the oil to return to 350 before adding more chicken
repeat until done
