Super simple carrot cake recipe that is great as a dessert or for breakfast with coffee. You can add a brown butter icing or cream cheese frosting to this recipe, but I found the sweetness level to be perfect without it.
Preheat oven to 350 degrees F. Gather and prep ingredients. Allow the butter to soften at room temperature. Next, peel and finely grate the carrots.

Cream the softened butter in a large mixing bowl, then slowly add in the sugar. The texture should be very light and fluffy.

Add in the eggs, one by one, to the creamed butter. In a separate bowl, mix the flour, baking powder, cinnamon, nutmeg and salt together until thoroughly combined. Then add in the warm water and mix. Slowly fold in the flour mixture to the creamed butter and eggs. Do not work too much - just enough so that white flour is no longer visible.

Pour the mixture into 2 greased 9"x5" bread pan and bake for 40-45 minutes. If you are using a baking sheet, allow to bake for 25-30 minutes.
