Easy Meal-Prep Chicken Curry

Super easy to make a ton of for meal-prepping, and delicious. Add whatever veggies and herbs/spices you like, this is just a good base for how I make it. I serve it with brown rice.

Ingredients

  • 1 pound
    chicken thighs, boneless & skinless
  • 1 tablespoon
    olive oil
  • 18 fluid ounces
    coconut milk
  • 3 tablespoons
    curry spice
  • 2
    bell peppers, chopped
  • 1
    onion, chopped
  • 4
    potatoes, chopped
  • 1 pound
    mushrooms, quartered
  • 1
    cauliflower head, chopped
  • 2 tablespoons
    garlic powder
  • 2 tablespoons
    hot sauce optional
  • salt + pepper

Preparation

  1. 6 mins

    Add olive oil to a large stock pot over medium-high heat. Season chicken thighs on both sides, and sear when oil is shimmering.

  2. 4 mins

    Remove chicken from pot, and add peppers and onion; saute until fragrant.

  3. 1 min

    Add a little bit of coconut milk to pot and deglaze.

  4. 10 mins

    Add remaining coconut milk, potatoes, mushrooms, and cauliflower. Add seared chicken, garlic powder, and hot sauce. Stir to combine and bring mixture to a boil.

  5. 30 mins

    Once boiling, reduce heat to medium and simmer for at least 30 minutes. It can go for longer, just add some water if liquid level gets too low.

  6. Season to taste, and serve with rice.
