The theory behind this works similarly to blanching. "Steam" the vegetable by trapping their own moisture until bright green, then remove the pan to crisp them up
Adjust oven rack to upper-middle, and pre-heat oven to 500 degrees.
Trim and half the brussel sprouts.
Toss brussel sprouts, melted fat, salt, and pepper.
Arrange sprouts on a sheet pan cut side down. Put a second pan on top as tightly as possible, no gaps.
Bake for 10 minutes covered. Remove top pan and bake for another 10-12 minutes uncovered, until sprouts are desired level of crispy.
Taste for salt & pepper and serve.
