Rinse sushi rice in fine mesh strainer until water runs clear.
Add sushi rice and water to Instant Pot. Set to cook for 7 minutes, with a 5 minute natural release.
The Instant Pot will take around 10 minutes to get up to pressure.
Place spam slices in medium skillet over medium-high heat (no oil is necessary). Cook spams until heated through and some crispy parts have formed.
Optionally, add some water to the skillet to help render out fat from the spam.
Combine rice seasoning ingredients in a small bowl, and whisk together until sugar and salt is dissolved in the vinegar. Once rice is finished cooking, release pressure and add seasoning to rice; stir to combine.
Using the short side of a slice of spam as a guide, cut the nori into strips.
Wet your hands so the rice doesn't stick to them, and grab a small handful of rice. Cup your palm and press it down, so that it is 2-3 fingers wide.
Place rice ball onto single nori strip. Optionally brush spam with teriyaki sauce, and place spam on top of rice. Fold nori around the spam and rice, sealing with a few individual grains of rice.
Repeat until all spam, rice, and nori is used.
I cooked the rice in my Instant Pot, but you can replace that step with just cooking the rice according to the package directions.
