One time, Jackie and I found an online recipe for copy-cat Auntie Anne's soft pretzel, and made it using a mysterious flour in my mom's cabinet when we ran out of normal flour. They were fantastic, mythically amazing pretzels. Everyone loved them.
We can't really find the recipe again. Maybe this is it?
Sprinkle yeast into warm water. Stir, then let sit for 5 minutes.
Add brown sugar, salt, and stir to dissolve. Add flour, and knead untill smooth and elastic.
Let rise for 30 minutes.
Prepare a baking soda bath with baking soda and warm water.
Shape into pretzels, dip into water bath, and bake at 450 for 10 minutes.
Brush with melted butter and/or sprinkle with salt
If you don’t have bread flour they’re fine if you use 4 cups of all-purpose flour (instead of the 3 cups all-purpose and 1 cup bread flour the recipe calls for.)
And if you ignore the baking soda water bath step they're just as delicious. The baking soda bath just makes them shinier and prettier.
