Bacon Cheese Spread with Carmelized Onions

Creamy, salty, cheesy spread/dip. Perfect for the holidays, or anytime you're not too worried about calories.

Ingredients

  • 7 cups
    chopped onion
  • 6
    slices bacon, chopped and cooked
  • 4 ounces
    Emmentaler cheese, shredded and divided (can sub Gruyere, Fontina, or Gouda)
  • ⅔ cup
    mayonnaise
  • ⅔ cup
    fat-free sour cream
  • ½ teaspoon
    salt
  • ½ teaspoon
    black pepper
  • 2 tablespoons
    Chives, chopped optional

Preparation

    Preheat oven to 425

  2. 30 mins

    Heat a large skillet over medium-high heat (cast iron works best). Coat pan lightly with cooking spray. Add onion to pan; sauté 5 minutes, stirring frequently. Reduce heat to low; cook 20 minutes or until golden brown, stirring occasionally. Cool slightly.

  3. 5 mins

    Reserve 1/4 cup of cheese. Combine remaining cheese, caramelized onion, and the remaining ingredients in a medium bowl. Transfer the mixture to a 2-quart glass or ceramic baking dish coated lightly with cooking spray.

  4. 20 mins

    Sprinkle with reserved 2 tablespoons cheese. Bake at 425° for 20 minutes or until browned and bubbly.

  5. 1 min

    Serve with your favorite cracker, crusty bread, tortilla chip, or anything that helps you shovel it in your mouth.
