This is just adding a few vegetables to the tomato water and letting it sit. It rounds out the flavor of the tomato water.
If you've already made the tomato water, simply add the celery, leeks, and thyme to the water.
*If you haven't yet made the tomato water, you can save time by adding the celery, leeks, and thyme to the mixing bowl which catches the strained tomato water while it's in the refrigerator.
Allow the celery, leeks, and thyme to infuse in the tomato water for at least 8 hours.
Strain the infused water and store in the refrigerator until used.
This preparation would work with other additions as well. Things like bay leaves, peppercorns, and chile peppers come to mind.
