Ingredients

  • ½
    Green Cabbage, Shredded
  • 1
    Carrot, Julienned
  • ½
    Onion, Thinly Sliced
  • ½
    Jalapeno, Thinly Sliced
  • Marinade
  • 1 cup
    Vinegar, ACV + White: Balanced to Your Preference
  • 1½ cups
    Water, Hot
  • 1 teaspoon
    Oregano
  • Black Pepper, To Taste
  • 2 teaspoons
    Sea Salt, Do NOT Use Iodized Salt

Preparation

  1. 10 mins

    Mix marinade ingredients then add the veggies. Crushing the cabbage a bit while mixing will help it fit into the Mason jars.

  2. Transfer to Mason jar(s), make sure veggies are entirely immersed. Chill overnight.

Notes

You can use a few pieces of red cabbage to add a little color to your Curtido. Alternatively you can use red onions or a slice of a beet.

Tip: You can buy a pre-shredded bag of coleslaw mix which usually contains cabbage & carrots.
