1. Keep a kadai(pan), pour 2spoon oil, wait till oil is hot.
2. Add ullunthu fry it after few sec add garlic, ginger tamarind, pacha millakai when ullunthu become brown remove it form stove .
3. Transfer this to a plate, keep the same kadai & pour 1/2 spoon oil then put puthina leaves 2-3 min vathakkavum(saute) when the color change from light green to dark green. Remove from gas( at this stage u will get a aroma smell if u keep it more than this time puthina will become black) cool it for some time.
4. Now u first grind paruppu salt coconut(make it small pieces) garlic ginger & tamarind after 1min then add puthina grind it coarsely or before fine stage the reason to add puthina finally is it grind easily than other items.
if ur having more quantity grind it 2 times (half qnt first & half second time)
if u grind w/o water u can use it as thuvaiyal side dish for rice
for dosa &idly add water as u required
