Thai Peanut Sauce

Ingredients

  • 1
    1" piece ginger, peeled
  • 1
    small garlic clove, to taste
  • ½ cup
    creamy peanut butter
  • 2 tablespoons
    reduced-sodium soy sauce, or tamari
  • 1 tablespoon
    lime juice
  • 1 teaspoon
    light brown sugar, packed
  • ¼ teaspoon
    crushed red pepper flakes optional

Preparation

    With motor running, drop ginger and garlic clove into a blender and blend until finely chopped.

  2. 3 mins

    Add peanut butter, soy sauce, lime juice, brown sugar, red pepper flakes, and 1/3 cup water and blend, adding more water by tablespoonfuls if needed to thin, until smooth.

Notes

I like a lot of garlic, so I add 3 or 4 cloves. I also use Truvia instead of brown sugar and that works pretty well. Not exactly the same taste, but you could add a little molassas to make up for it. Can be made ahead and refrigerated.
