A delicious autumn dish.
Cut squash in half; remove seeds. Place in 350° oven cut side down on aluminum foil or in pan for 45-60 minutes.
Roll sausage into balls and brown in medium skillet. Drain on paper towels.
Put applesauce into skillet after grease has been drained. Place the sausage balls into the applesauce and heat.
When the squash is soft to the touch, remove it from the oven. Turn it cavity side up. Fill it with the sausage/applesauce mixture. Return it to the oven for another 10-15 minutes until it is completely baked. Serve.
Mixture should be heaped over the top.
Add cinnamon to the applesauce.
